Teppanyaki course featuring Kuroge Wagyu steak and seasonal seafood
A teppanyaki course featuring dishes made with seasonal ingredients and the owner’s carefully selected Kuroge Wagyu steak. This 9-dish menu includes sashimi, seasonal seafood and meat dishes, alongside other flavours of the season. Suitable for an everyday meal, as well as business entertaining or dining with someone important. Course menu: Two appetisers: two small dishes to enjoy with a drink, such as wasabi-stem and mentaiko or spicy konjac. Seasonal appetiser: a daily dish such as slowly simmered beef tendon and daikon. Salad: Caesar salad with mushrooms and bacon, or salad with cured ham and tomato in onion dressing. Sashimi: the day’s fresh fish, such as Ehime Prefecture bluefin tuna, bluefin tuna chutoro or kombu-cured sea bream. Meat dish: beef stew or beef tongue stew. The beef, of a quality also used for steak, is simmered so generously that the butcher reportedly calls it “a waste”; it becomes tender enough to fall apart. Enjoy the rich sauce with baguette. Seafood: Hokkaido scallops seared on the teppan and served with rich sea urchin sauce (or oysters grilled with browned butter, depending on the season). Kuroge Wagyu steak: a rare cut sourced that day, such as misuji from Hitachi beef or tomosankaku from Sendai Kuroushi, grilled on the teppan. Seared on the outside and moist within, it releases the sweetness of its fat as you chew. Finish: garlic-scented rice shaped into a rice ball and browned on the teppan. After-meal dish: house-made pickles (seasonal fruit may be served on some days). Course-only extras: upgrade to A5-rank Kuroge Wagyu fillet for +3,300 yen (tax included); add foie gras to the steak for +1,980 yen (tax included); add abalone steak with browned butter sauce for +4,400 yen (tax included). Sirloin steak is also available à la carte. Dishes shown are examples; ingredients and dishes vary with the season and availability. A separate private-room service charge of 10% of the food and drink bill applies when using a private room.
